What changes at scale
Past a certain headcount the cooking is the straightforward part. What changes is the serving window: four hundred people cannot pass one buffet line quickly, so the line gets doubled or split, and the food has to hold temperature for longer than a small order ever needs to. That is what chafing dishes are for, and why we confirm the room layout before quoting.
Quantities change too. A community event where people come back for a second plate needs different planning from a seated function where they do not. We would rather ask about that than guess and leave a room short.
